Noodles

I don't see noodles (e.g. pancit canton, yakisoba, etc) in the menu. Are these okay to eat these? I eat these sometimes for breakfast.

Yes, it's good for one serving. The only labor-intensive part is kneading and rolling it out because you need to make it elastic so it doesn't disintegrate while boiling. But it's so easy to cook and so much more filling than prepackaged noodles. :-q

Or, something I've recently learned to do before enrolling in the program is to make your own noodles. It takes a little extra effort but is much healthier than prepackaged and processed noodles.

All you need is 3/4 cup flour (part of which can be replaced with malunggay powder, or grated squash or zucchini) and 1 egg yolk. That's it. Combine until you have a dough that is fairly solid but still easy to mold with your hands. Add a little more flour if it's too sticky, but don't let it get too dry.

Using a rolling pin, roll out your dough on a floured surface, making it as flat and thin as possible. Let it rest for 30mins-1hr. Then with a sharp knife, cut it into thin strips. These are now your noodles.

Drop your handmade noodles into a pot of boiling water and cook for 2-3mins or until almost translucent. Drain, and serve with your sauce of choice. :) I personally prefer tossing them in a little olive oil, chili, and garlic, with just a pinch of salt.

I don't recommend instant noodles as they are very high in sodium. However, you can opt for cooked pancit canton, noodles with soup, or pasta from time to time in exchange of your rice allowance ( See Express Meals for options).
