Meatless Recipes for Lenten Season

Hi Everyone! It's Lent again, and for Catholics every Friday is a meat free day. What are your go to meatless dish during this season? What do you do to make your meat-free dishes more exciting? I, for one, made a seafood version of Kare-Kare. I replaced pork/beef with fish and assorted seafood, it tasted divine! How about you? Kindly share with us your ideas and suggestions on how to enjoy every meatless Fridays of lent. I think this is where the "FRIDAY MEAL" originated --- Ginisang Munggo and Fried Fish (commonly used fish Galunggong or Tilapia)
This traditional menu came about because in the past, Filipino Catholics had to abstain from meat on Ash Wednesday and all the Fridays throughout the year.
Must try The Bon Appetit Ginisang Munggo

I would go for any tofu recipes. They yield almost the same amount of protein as in meat, and tastes good, as well. I personally liked this one from the list of recipes in this program: Tofu in Oyster Sauce
