Ingredients for 1 person/s :
- 1 teaspoon olive oil
- 1 cup spinach
- 2 large eggs
- 5 egg whites
- 4 fl. oz. nonfat milk
- 1 oz. reduced fat cheddar cheese
- salt and pepper to taste
Directions:
- Preheat oven to 400 degrees.
- In a nonstick skillet, heat oil over medium-high.
- Add spinach and cook, stirring occasionally until wilted, about 2 minutes.
- Transfer to a colander or strainer, and drain, pressing with a rubber spatula to release as much liquid as possible. Place in a baking dish.
- In a medium bowl, whisk together eggs, milk, and cheese. Season with salt and pepper.
- Add to the spinach in the baking dish.
- Top with cheese.
- Bake for 20-25 minutes, or until golden brown in color.
- Serve.
