Spinach and Cheddar Strata

5 meat + 1 dairy + 1 fat + 1 vegetable
Ingredients for 1 person/s :
  • 1 teaspoon olive oil
  • 1 cup spinach
  • 2 large eggs
  • 5 egg whites
  • 4 fl. oz. nonfat milk
  • 1 oz. reduced fat cheddar cheese
  • salt and pepper to taste

Directions:
  • Preheat oven to 400 degrees.
  • In a nonstick skillet, heat oil over medium-high.
  • Add spinach and cook, stirring occasionally until wilted, about 2 minutes.
  • Transfer to a colander or strainer, and drain, pressing with a rubber spatula to release as much liquid as possible. Place in a baking dish.
  • In a medium bowl, whisk together eggs, milk, and cheese. Season with salt and pepper.
  • Add to the spinach in the baking dish.
  • Top with cheese.
  • Bake for 20-25 minutes, or until golden brown in color.
  • Serve.
