Diet zucchini lasagna

1 meat + 1 dairy + 1 vegetable

For 900/1200/1400 kcal
Ingredients for 1 person/s :
  • 1 cup zucchini
  • 90 g drained tuna in brine
  • 1 small pouch tomato sauce
  • 1/2 pc onion
  • 70 g grated low fat cheddar cheese
  • Basil
  • Salt,pepper

Directions:
  • Preheat oven to 180 º C.
  • Cut zucchini into strips in the longitudinal direction. Pre-cook 2-3 minutes in boiling salted water (or microwave). Mince the onion and fry in a dry nonstick pan.
  • Add it to tomato sauce, along with flaked tuna, chopped basil, salt and pepper.
  • Layer a baking dish with strips of zucchini, salt and pepper, prepared tuna and grated cheese.
  • Finish with a layer of grated cheese on top.
  • Bake 25 minutes.
  • Bon appetit!

Loved this dish! There no zucchini available but had it with eggplant as well(Thanks doki_marianne for the idea). My 9 yr old daughter liked it as well but was a bit disappointed knowing there was no real noodles. She asked me if I can cook it again but with real noodles. :)

zuchinni was not available... but i used eggplant and it was sooo yummy...

Just take note of the indicated portion, which is 1 meat + 1 dairy + 1 vegetable, then you may refer to the List of Food Equivalences for your preferred substitute food items. As for a recipe with similar food portion, you may try "Green cabbage rolls with cheese, ham and tomatoes"
